Charlotte recipes - a great variety. Perhaps every housewife has her own way of preparing these simple baked goods. This option is interesting for the caramelization of apples. An easy step, however, it is he who significantly enriches the taste of charlotte. A piece of such a dessert can be the perfect accompaniment to a cup of tea or coffee.

We prepare all the necessary products for the charlotte, we take out the eggs and butter from the refrigerator - it is advisable to bring all the ingredients to room temperature.

Separate the whites from the yolks. Pour the yolks into a bowl, pour 150 grams of sugar on them, mix slightly and leave for a while so that the sugar begins to dissolve.

Meanwhile, peel the apples, cut them into small pieces and put them in a frying pan. Sprinkle the apples with cinnamon and add the diced butter there. At medium temperature, heat the apple slices with butter for 2-3 minutes, the oil should completely dissolve, and the apples should become a little softer.

Pour the remaining sugar (50 g) onto the apples, mix and immediately increase the temperature of the stove. In a couple of minutes, the sugar should dissolve and caramelize the apples. Do not forget to constantly stir and monitor the process in order to prevent sticking.

Now we return to the yolks: beat them with a mixer at high speed until a dense, thick foam is formed.

In a separate container, beat the proteins with a mixer at high speed. The protein mass does not need to be whipped until firm, it just needs to thicken well and form peaks on the whisk. The task of the proteins is to aerate the dough so that the charlotte turns out to be airy and fluffy.

We combine the yolks with the proteins: we introduce the proteins into the yolks in portions, gently stirring each portion of the proteins in a circular motion from top to bottom. Then add the sifted flour and mix the dough with similar movements. It is important to work carefully, trying to preserve the airiness of the mixture as much as possible.

Grease the mold with oil. If you are using a silicone mold, you do not need to lubricate with anything. Pour the dough into a mold, spread the caramelized apple pieces on top and lightly drizzle with the remaining caramel (1-2 tablespoons so as not to overmoisten the dough). Sprinkle with lemon zest and sesame seeds. Apples, under their own weight and the weight of the sprinkling, will sink into the dough - this is how it should be.
