Baking with berries is always juicy and colorful - it's like a piece of summer on a plate. In winter, you can use frozen fruits, their taste and aroma are not inferior to fresh ones. According to this recipe, we suggest preparing charlotte with frozen cherries. Sour berry combined with airy sweet dough is very refreshing and uplifting.

Place the butter in a wide bowl and liquidate: you can use a microwave or a water bath for this.

Add sour cream to the melted butter and add sugar. It is worth noting that it is better to use sour cream with a high fat content - 20% - 25%, the dough will be more crumbly and tender.

Add eggs to a bowl with butter, sugar and sour cream and mix well with a whisk. For convenience and speed, you can use a mixer and beat everything at medium speed.

Sift wheat flour into the resulting liquid mixture, pour in baking powder, add salt. The dough can be kneaded with either a whisk or a mixer at medium speed.

The dough should be smooth, without lumps, rather thick, but fluid. It is convenient to work with such a consistency to form a charlotte.

We prepare cherries for charlotte: the berry must be completely thawed and allowed to drain the resulting juice. If you do not drain the liquid, the charlotte will turn out to be too wet, the dough will not rise well. You can also use fresh cherries: rinse the berries, remove the seeds and let the excess juice drain before adding to the dough. Grease the baking dish with oil (if you have a silicone mold, you don't need to grease it with anything) and put half the dough into it, gently level it. Place the cherries evenly on the dough, trying to fill the entire perimeter with berries.

Then we spread the remaining dough on the berries and just as neatly level with a spoon or spatula, trying not to move the berries.

We put the completed form with the future charlotte in an oven preheated to 180 degrees on a medium level and bake for 30-40 minutes. Baking time may take a little less or more - focus on your oven. By the end of baking, the charlotte should grow slightly and be covered with a golden brown crust.

We take out the finished charlotte from the oven and let it cool slightly. Then we take it out of the mold and cool it completely. Before cutting into portions and serving, you can sprinkle the charlotte with powdered sugar, to taste.
