Let's prepare pink salmon shashlik on the wire rack. To keep the fish pulp as juicy as possible, we will not separate it from the bone. Marinate pink salmon in saline and then flavor with dill. After marinating, fry for a couple of minutes on the grill - the fish is ready.

We clean the pink salmon from scales and entrails, rinse thoroughly, remove the head, fins and tail.

Cut the prepared carcass into transverse pieces two and a half to three centimeters thick.

Prepare a saline solution in a separate deep bowl. Pour in 600-700 milliliters of cold water, add salt and granulated sugar in the specified amount. Stir well until the crystals dissolve.

We place the pieces of fish in the solution and leave for an hour and a half.

Then we drain the water. Wash the dill, dry it and cut it coarsely. Put the greens on the fish and mix the whole place. We leave for another hour, after which we remove the dill so that it does not burn during frying.

We prepare a grill with embers. We put the prepared fish on a grid greased with vegetable oil and send it to the grill. Cooking pink salmon for about one and a half to two minutes on each side. The surface should be covered with a light golden crust.
