Carp barbecue on the grill

Carp meat can smell like mud. Therefore, before cooking, be sure to marinate it in spicy spices and a piquant marinade. Correctly marinated fish turns out delicious, with a pleasant aroma and delicate taste. Let's make a kebab out of it - a great alternative to meat in the midst of the barbecue period.

We wash the fish, clean it of scales, remove the entrails, head and fins. We cut the carcass into fillets, removing the skin, ridge and adjacent bones. Cut the fillet into pieces of approximately the same size. Place the prepared fish pieces in a deep bowl.

Prepare the marinade in a separate bowl. Peel the onions and cut them into small pieces with a knife. We do the same with garlic. Mix onion, garlic and lemon zest in a bowl.

Next, pour in orange juice and soy sauce, mix.

Add salt to taste, granulated sugar, olive oil and tomato paste. We mix.

Fill the fish with the prepared marinade, mix everything together with your hands, trying to evenly distribute the mixture over the pieces of carp. We tighten the dishes with fish with cling film and send them to the refrigerator for pickling for one and a half to two hours.

We prepare a grill with embers. There should be no open flame. We string pieces of pickled carp on skewers and send them to the grill. We cook the fish for about twenty to twenty-five minutes, periodically turning it on different sides. It is important not to overdry. Serve the finished fish hot, garnished with fresh herbs and vegetables.
