Sorrel with salt for the winter in jars

Sorrel can be prepared for the winter in a very simple way. No cooking and other heat treatment of raw materials is required. It is enough just to rinse and dry the greens well. After that, grind it, mix it with salt and distribute it to the storage jars. That, in fact, is all.

Servings - 500 ml. finished sorrel roughly.

We sort out sorrel from defective leaves, remove coarse stems. We wash the greens in running water very carefully so that there is no sand left. Place the washed sorrel on a clean towel and dry well.

We cut the prepared sorrel into transverse ribbons.

Place the chopped sorrel in a large bowl and add salt. mix everything thoroughly with your hands. The sorrel will change color - it will become darker.

We sterilize jars and lids in any usual way. Let it dry completely. Put sorrel with salt in prepared jars - ram it quite tightly. Pour vegetable oil on top with a thin layer. We close it with plastic lids.
