The flavorful green soup is easy to prepare and has several ingredients. The pleasant sourness of fresh sorrel in the chicken broth with a spicy pungency makes this first course delicious and satisfying.

Rinse the chicken pieces thoroughly and place in a saucepan, add water and cook over low heat. Remove foam from the surface and reduce heat. Cover the pot with a lid and cook for 1 hour.

Rinse the green onion feathers and chop finely. Transfer it to a bowl.

Preheat a frying pan, add a little oil and fry the onion over low heat until transparent. Pour green onions to it, mix and fry for 2 minutes, then remove from heat.

Rinse the sorrel well, paying attention to each leaf. Place it in a colander to drain the water. Finely chop half of the sorrel.
