Sorrel soup

I love a variety of puree soups and often experiment. I want to share a recipe for puree sorrel soup, which is ideal for me in its creamy consistency. To prepare a delicate creamy soup, you need a minimum set of ingredients.

Prepare the required ingredients. Sort out young sorrel leaves carefully, rinse in cool running water and dry. Fill a small deep saucepan with cold water, bring to a boil, reduce heat, add prepared sorrel and cook for about 5 minutes.

Transfer the cooked sorrel to a small container.

Put a small saucepan or saucepan over medium heat, add the required amount of butter, reduce heat to low and melt it, stirring constantly.

Peel the garlic and put in melted butter, fry for a few minutes, stirring occasionally.

Pour the broth in which the sorrel was cooked to the garlic. Cover and simmer for 10-15 minutes. Then remove the garlic cloves and place them in a container of sorrel.

Pour a glass of vegetable broth and gradually pour into the yolks in a thin stream, beating with a whisk or mixer. Bring to a smooth, airy consistency.

Add chopped sorrel and garlic vegetable mass to the broth. Mix thoroughly.

Pour the hot sorrel puree soup into portions and serve, garnished with half a boiled chicken egg and sour cream if desired. The puree soup turns out to be quite rich, aromatic and nutritious.
