Chocolate royal cheesecake with cottage cheese in the oven

A very spectacular cheesecake that will amaze a sweet tooth not only with its appearance, but also with its taste. The whole secret lies in the attractive contrast of the rich chocolate base and the snow-white curd layer. A special highlight is the cherries in the middle of the curd filling. They add a slight sourness and berry juiciness - very handy. If you love curd baked goods, but are fed up with the standard recipes, this version of the royal cheesecake will definitely help to add variety.

Ingredients

Cooking process

step 1 out of 15
Cooking a chocolate shortbread base. Rub the chocolate butter into a wide bowl on a coarse grater. To make it easier to rub, we recommend placing it in the freezer for half an hour beforehand. Pour cocoa powder to the oil shavings.
step 2 out of 15
Then add forty grams of powdered sugar and the specified amount of sifted flour. With dry hands, mix everything together and rub vigorously until you get a homogeneous, small, damp crumb, as in the photo. The blank for the sand base is ready, we place it in the refrigerator.
step 3 out of 15
To prepare the curd filling, put the curd in a separate bowl, pour the remaining amount of powdered sugar and a pinch of vanillin on top.
step 4 out of 15
Add eggs, mix. Using an immersion blender, we punch everything well together.
step 5 out of 15
You should get a homogeneous, homogeneous, smooth mass, similar to a delicate cream.
step 6 out of 15
Let's move on to preparing the cherries. Can be used both fresh and frozen. In the latter case, let the berries thaw completely. We remove the seeds and drain off the excess juice.
step 7 out of 15
Pour the cornstarch into a separate bowl of small volume and spread the prepared cherries to it. We roll the berries in starch so that they are covered with it from all sides. This will help keep the juice inside the berries during baking and avoid staining the snow-white curd filling.
step 8 out of 15
Preparing a baking dish. Lubricate it well with butter. You can also cover it with oiled parchment - then it will be more convenient to take out the cheesecake after baking.
step 9 out of 15
Pour two-thirds of the cooked chocolate sand into the bottom and distribute it evenly over the entire area.
step 10 out of 15
Gently spread the curd mass on top. We level it with the back of a spoon or a spatula.
step 11 out of 15
Put cherries rolled in starch on the curd filling. We try to distribute them evenly throughout the cake so that each piece contains the same filling when cutting.
step 12 out of 15
Gently press the cherries into the curd mass with your fingers. The berries must be hidden.
step 13 out of 15
We complete the formation of the cheesecake: pour out the remaining shortbread chocolate chips and carefully level it.
step 14 out of 15
Preheat the oven to 180 degrees. We put the form with the formed cheesecake on the middle level and bake for fifty to sixty minutes. After the baking time has elapsed, we take the finished cheesecake out of the oven and leave it in the form for fifteen minutes. After that, carefully remove the cake from the mold and let it cool completely.
step 15 out of 15
Cut the cooled cheesecake into portioned pieces and serve.

Bon Appetit!
