In order for the cream to turn out thick and tasty, the chocolate must be of high quality. You can use milk or bitter, but it is worth remembering that the higher the percentage of cocoa in the product, the more dense the finished cream will turn out. As for cream, you need to choose those with a fat percentage of at least 30% - they whip easily and hold the texture well. It is better if the cream is well cooled before whipping.

Before making the cream, the chocolate must be melted to a liquid state. Break the tiles into small pieces and place them in a bowl.

Place the bowl in a water bath and stir the chocolate until it is completely melted. Alternatively, you can use the microwave to melt the chocolate. We put dishes with chocolate in it and heat the contents in interval mode for 30 seconds. Knead well after each heating. Usually, two to three minutes of such heating is enough until complete melting. Let the liquid chocolate cool slightly before combining it with the cream.

Put the well-chilled cream in a bowl for whipping, immediately add the icing sugar and start whipping. We start at a low speed and gradually build up the revs. We achieve a dense foam with soft peaks.
