Classic lamb shurpa is prepared only from young meat, which has a special unique taste and aroma. First, prepare all the products specified in the recipe for making shurpa. Rinse the lamb well and pat dry with a napkin.

Heat the lamb fat well in a skillet and fry the lamb pieces in it until golden brown on all sides. You can also fry in vegetable oil.

Transfer the fried meat to a saucepan. Cover with cold water and bring to a boil over high heat. Remove the foam from the surface. Then cook the meat over low heat for 40 minutes. With this cooking, the broth will turn out to be more transparent. Do not salt the broth yet.

Transfer the cooked meat to a separate plate and cover with a lid.

Peel and rinse potatoes, bell peppers, carrots and onions. Cut the potatoes into halves, because the classic recipe provides for large cutting of vegetables.
