Mackerel with vegetables for the winter

We are sharing with you a recipe for a great preparation for the winter - mackerel salad with carrots, onions and tomatoes. The salad is somewhat reminiscent of fish marinated or in tomato sauce. In any case, it turns out to be tasty, sweet and sour in taste, moderately salty and comes in handy when you need to quickly set the table.

First, let's prepare all the ingredients. We wash the mackerel under cool running water, remove the head and gut it. Peel and wash onions and carrots. Rinse the tomatoes and put them on a kitchen towel so that they dry out a little.

Chop the onion into small cubes, put it in a pan with vegetable oil and fry for 3-4 minutes.

Grate carrots in Korean style.

Cut the tomatoes into small cubes and send them to the bowl with the carrots.

Put the carrots and tomatoes in a deep saucepan, add the fried onions, salt and sugar, mix well and put on fire. Bring the vegetables to a boil over medium heat, then reduce the heat and simmer the vegetables for 10-15 minutes.

Cut the mackerel along the back and carefully separate the fillet from the bone. Then we cut the fish into small pieces 3-4 cm wide.

We send the mackerel to the pan for the vegetables, mix, add vegetable oil and vinegar and continue simmering the salad over low heat for another 45-50 minutes, after which we remove the pan with the salad from the heat.

We lay out the finished hot salad in sterilized jars, tighten the lids, turn the jars upside down and leave to cool completely at room temperature. Then we remove the salad for storage in a cool dark place.
