It is very convenient not only to bake mackerel on the grill, but immediately accompany it with vegetables during baking. The fish with a side dish will cook at the same time and will turn out juicy and rich. The hassle is less, and the result is even tastier.

We wash the mackerel, cut the abdomen and remove the insides. Leave the tail and head in place, remove the gills. We wash the carcasses with running water and dry them with paper towels outside and inside. In a separate container, mix the soy sauce and one clove of garlic, peeled and passed through a press. Pour the resulting mixture on the fish from all sides, sprinkle with salt to taste and leave to marinate for fifteen minutes.
Cut off pieces of foil for each fish. The size of the foil sheets should be such that the mackerel together with the vegetables can be wrapped securely and that the inner juices do not leak out. We put potatoes and onions on foil. Put the pickled mackerel on the resulting vegetable pillow. Put lemon and garlic inside the fish. Place tomatoes and mushrooms around. We put the dill sprigs. Sprinkle vegetables with salt and black pepper. We wrap the mackerel together with vegetables in foil, forming a strong bag.
We place the mackerel in foil on the charcoal coal without an open flame. We bake until tender. Depending on the size of the fish and the heat of the coals, the baking process will take twenty to thirty minutes. Transfer the finished mackerel with vegetables from the grill to a dish, open the foil. Serve hot.
