Mackerel in oil for the winter

Home preservation of mackerel is not a quick process. Preparation of fish takes a little time, the main long process is simmering at a low temperature in the oven. This will take about 6-7 hours. The result is a delicate spicy mackerel with butter.

Defrost freshly frozen mackerel at room temperature for 1.5-2 hours. Then we cut off the head and tail, gut the carcass and rinse it well under cool running water. We spread the fish on a cutting board and cut into pieces 3-4 cm thick.

We put the chopped fish in a glass jar, add salt, pepper and vegetable oil (pour the oil into the jar so that it does not reach 2-2.5 cm to the neck, since the mackerel will release enough juice during the cooking process). We cover the jar with a lid (if there is an elastic band in the lid, we take it out so that it does not burn under the influence of high temperature) and put it in a cold oven to simmer at 170 degrees for 15-20 minutes until bubbles appear in the oil, then reduce the temperature to 100 degrees and simmer in the oven for 5-6 hours.

We take out the finished preservation with a stuck from the oven and tighten the lid tightly. Turn the jar upside down and leave at room temperature until it cools completely, then put it in a cool place for storage.
