Sweet apricot pie

This is the kind of cake that you don't have to spend a lot of time in the kitchen with. Quickly knead the dough, put it in a mold, distribute apricots on top and send to the oven. Despite all its simplicity, the pastries are very tasty: the dough is crumbly and soft, and the fruit pieces are juicy, slightly sour, refreshing. An ideal dessert for a cup of coffee at an afternoon tea.

Put soft butter, regular sugar and vanilla sugar in a bowl. Beat until creamy. Add eggs one at a time and continue beating.

Add the sifted flour along with the baking powder.

Knead a homogeneous thick dough.

Grease the cake pan with vegetable oil and sprinkle with flour. Alternatively, you can cover it with oiled parchment - this will later simplify the process of removing the finished cake from the mold. We spread the kneaded dough in the form, level it along the bottom.

We wash and dry the apricots. We cut each fruit lengthwise into two parts and manually remove the bone. On the dough in the form, lay out the prepared apricots with the skin down.

We send the form into an oven preheated to 180 degrees, bake for about forty-forty-five minutes until a pink-golden color. The finished product should be beautifully reddened. We take out the cake from the oven, let it cool.

Then we take the pastries out of the mold, put them on a dish and sprinkle with powdered sugar on top.
