Cooking process

step 1 out of 6
After purchasing, you should not store currants in a warm place for a long time. This can help start fermentation. Therefore, start cooking immediately after purchasing the berries. First, we need to sort out the red currants. Remove any spoiled berries or any debris that might get lost among the fruit. Transfer the currants to a large bowl or saucepan. Cover them with water and let sit for about 30 minutes. After that, rinse the berries several times. Transfer them to a colander so that the bulk of the liquid from the currants is glass. Spread paper towels on the table. Place the berries on them and leave them to dry. Only pure and dry berries should be used for the sauce.
step 2 out of 6
Chop the currants. You can do this manually with a pusher, or use a blender. To save our time, we will choose the second option. We need to wipe the crushed berries. You can use a sieve for this. If it is not at hand, replace the sieve with a fine colander. However, if you rub the berries through a sieve, the consistency of the sauce will be much softer. Squeeze the sauce and cake with cheesecloth, and then mix them together.
step 3 out of 6
It is not recommended to use aluminum cookware for making the sauce, as it can form harmful substances. Move the currant berries to any dish. For example, a frying pan or saucepan. Place the pot over low heat. Wait for the sauce to gurgle and reduce heat to very low. If the sauce starts to boil, you will have to discard the food and start over from the beginning. We begin to gradually add sugar. Do this in several steps. Stir the sauce constantly to dissolve. Add ground cloves and cinnamon, a pinch of salt and some ginger to it. Stir the sauce again. The last ingredient is vinegar. Pour it into a skillet and stir. Cook the sauce for another 5 minutes. If you want to spice up the sauce, add chili peppers.
step 4 out of 6
Let's start sterilizing the cans. Wash them in warm water using baking soda or regular detergent. Scald the lids with boiling water. Further sterilization will be done with steam. Fill the kettle with water. Put it on high heat. When the water boils, place the jar on the spout of the kettle so that it fills with steam. In this position, the jar needs to be held for about 5 minutes. Then transfer it to a towel. Leave the jars to dry.
step 5 out of 6
Strain the sauce before filling the jars. Pour the prepared sauce into a container.Screw on the caps. Make sure that no cracks appear on the surface of the can. Turn the jars over and place them on a towel. Leave the sauce to cool. Then transfer it to a cool place. For example, in the refrigerator.
step 6 out of 6
Sweet sauce for meat is ready. You can not be afraid of such an unusual combination. The sauce will perfectly complement any meat, revealing its taste. Enjoy.
