Puff pies have long been at the forefront of their simplicity and speed of preparation. And most importantly, they always turn out delicious. When baked, puff pastry becomes incredibly airy, and the berries always stay in place, without spreading outside the cake.

Despite the fact that the cooking process is significantly shortened, we need to take care of defrosting the dough in advance. After it melts and becomes malleable, divide the large layer of dough into two, in a percentage of 70:30.

Carefully remove the red currant berries from the branches, rinse and dry them in one layer on a paper towel.

Let's go to the test again. We roll out most of it, not very thinly, and put it in a suitable form, previously greased with a piece of butter. Roll out the second part of the dough as thin as possible.

Transfer the red currants to a bowl and mix with sugar, powdered sugar, starch, trying to ensure that all the berries are immersed in this mixture. Also at this stage we separate the yolk from the protein.

Final part. We spread the blank with currants in a mold covered with dough, slightly retreating from the edge. And on top of the filling we spread the second part of the dough, connecting the edges of one layer of dough with another. Lubricate the surface with egg yolk and send the blank to bake. We bake for 20-30 minutes in an oven preheated to 180 degrees. Let the finished cake cool slightly, then cut it.
