Puff pastry with cherries and cottage cheese

An easy dessert for those who do not like classic berry pies due to their excessive sweetness. In this recipe, the sourness of cottage cheese goes well with the taste of any berries, including cherries.

Ingredients

Cooking process

step 1 out of 7
Put the cottage cheese in a deep bowl and mix with the powdered sugar. To obtain a smoother and more uniform texture, the curd can be pre-grated through a sieve.
step 2 out of 7
Break the eggs into a separate bowl, separate the yolks, set them aside in a small container and refrigerate. Beat the whites with a mixer until stable peaks.
step 3 out of 7
Add the beaten egg whites in portions to the curd mass and mix gently until smooth. Stir in the cherries next. If you take frozen berries, then let them first settle in a colander to drain excess juice, and you can additionally squeeze them a little through cheesecloth.
step 4 out of 7
Roll out the puff pastry to length.
step 5 out of 7
Put the filling on it and spread it in an even layer, leaving a few centimeters free at one edge.
step 6 out of 7
Roll the filled dough into a roll. Remove the yolks from the refrigerator, lightly beat them with a fork and grease on the inside the edge of the layer that you left without the filling. Press it gently against the roll so that the cake does not fall apart later.
step 7 out of 7
Place the roll on top with a fork and brush on top with the remaining yolk. Bake the pie in an oven preheated to 200̊C for about 30 minutes. Focus on the degree of doneness of the dough and the color of the crust.
Bon Appetit!
