Zucchini juice for the winter - the king of vegetable juices

In this recipe, you are invited to prepare a very healthy drink from this vegetable for the winter time. Considering the nondescript taste of squash juice, let us give him a fragrant orange or lemon as a "partner".

Ingredients

Cooking process

step 1 out of 3
First, select the zucchini for juicing. Their variety and color do not affect the quality of the juice. Younger fruits are best suited as they are healthier and more juicy. Very little juice is obtained from overripe zucchini.
step 2 out of 3
Wash the zucchini well under running water, remove the tails on both sides and chop them into small pieces. If you have young fruits, you can leave the peel on. We get zucchini juice using an ordinary juicer as the best kitchen technique for juicing.
step 3 out of 3
Pour the resulting juice into a saucepan. Add to it freshly squeezed juice of one lemon or orange and the amount of sugar indicated in the recipe. Add a little vanilla sugar or vanillin, if desired. Place the saucepan with the juice on a small fire and cook the juice for 7 minutes. We sterilize cans and lids for preservation in any way. Before pouring the juice, we heat the cans a little so that they do not burst. Pour the prepared hot juice into jars and seal tightly with seaming lids. We turn the jars upside down, cover them with a warm blanket and leave them to cool completely. Healthy squash juice is ready. It keeps well for a long time in a cool, dark place.

Zucchini juice for the winter

We present to your attention a recipe for making a sunny zucchini drink with an original taste. Your kids will love this juice.

Ingredients:

  • Zucchini - 1.5 kg.
  • Orange - 1 pc.
  • Sugar - 100 g.

Cooking process:

  1. Rinse the zucchini well with running water and dry with a paper towel. Remove the tips of the fruit on both sides. Chop the zucchini into medium pieces. Remove the peel and pulp with seeds only from overripe fruits.
  2. Use a juicer to make zucchini juice. With sufficient power of the device, 850 ml of juice from 1.5 kg of vegetables is obtained.
  3. Pour the resulting juice into any container and place over low heat.
  4. Wash the large orange well and pat dry with a paper towel. Using a small-perforated grater, gently scrape off the orange zest, being careful not to catch the white layer of the fruit, as it will add bitterness to the drink. If you use lemon, do the same with it.
  5. Separate the orange juice by any method and be sure to strain it onto a sieve. For a better separation of the juice, place the citrus in the microwave for 15 seconds. One large orange makes about 80 ml of juice.
  6. Pour orange juice into a container for zucchini juice, add the required amount of sugar and put citrus zest there. Simmer the juice over low heat for 4 minutes.
  7. Rinse the juice cans thoroughly with baking soda. Sterilize them in the oven or microwave. Boil the seaming lids for 5 minutes.
  8. Pour hot squash juice into prepared jars and seal tightly with lids.
  9. Turn the jars with the lids down and cover with a warm blanket for subsequent pasteurization.
  10. Store juice in a cool, dark place.
  11. The resulting juice will be quite concentrated, so dilute it with water or add an ice cube before drinking.

A lot of zucchini grows. So I decided to try to save juice from them for frying pancakes. Pancakes and pancakes are difficult to fry with ripe zucchini.
