Pumpkin juice through a juicer for the winter

I propose to use a fairly simple and quick recipe, and prepare an unusually bright-tasting pumpkin juice through a juicer for the winter. Even novice housewives who have never been involved in conservation can cope with the process of preparing a wonderful healthy drink.

Wash the young ripe dessert pumpkin well, lay it on a tea towel, and then peel it with a vegetable peeler and remove the core with the seeds with a tablespoon. Cut the peeled pumpkin into small pieces, then place in a deep saucepan and cover with cold water so that it completely covers the vegetables.

Put the saucepan with vegetables on moderate heat and bring to a boil. Then reduce heat and simmer the pumpkin for about 10-15 minutes.

Gently put the boiled pumpkin with a slotted spoon in a separate container, cool slightly, and then pass it through a juicer. Do not drain the water in which the pumpkin was cooked, it will still be needed.

Combine the pumpkin passed through a juicer with the water in which it was cooked. Then add citric acid.

Then add the required amount of granulated sugar and mix well. Adjust the amount of granulated sugar yourself.

Put the saucepan with the contents on moderate heat and bring to a boil, periodically removing the resulting foam. Boil the juice for about 3-5 minutes.

Prepare juice cans. Wash them thoroughly in running water, using baking soda as an antiseptic, and then sterilize the jars in a way convenient for you - in a water bath, in a microwave oven or in an oven. Gently remove the hot pot of pumpkin juice from the heat.

Pour the hot vegetable juice carefully into sterile jars using a ladle. Pour boiling water over the lids in advance or boil in a saucepan.

Tighten the juice cans with sterile lids, then turn them upside down and wrap them with a terry towel. Leave in this state until completely cooled, then move the jars for long-term storage in a dark, cool place.
