If you have never tried pumpkin juice with dried apricots, then you have a wonderful opportunity to use a simple recipe and prepare this incredibly delicious drink. Pumpkin juice has an incredibly delicate and pleasant texture. Be sure to try cooking it.

Wash a medium-sized young squash thoroughly, pat dry with a tea towel, then peel with a vegetable peeler and remove the seeds with a tablespoon. Cut the peeled pumpkin into wedges.

Cut the pumpkin slices into small cubes, then place in a deep saucepan and cover with cold water so that it completely covers the vegetables.

Put the pot with pumpkin over moderate heat and bring to a boil. Then reduce heat, cover the pot, and cook the pumpkin for about 50-60 minutes.

In the meantime, measure out the required amount of dried apricots, sort it out and rinse thoroughly under cool water.

Dry the prepared dried apricots with paper towels, and then pass it through a meat grinder.

Add the required amount of granulated sugar and citric acid to a saucepan with pumpkin. Adjust the amount of granulated sugar according to your own taste.

Gently grind the resulting mass using an immersion blender until a uniform consistency is achieved. Bring to a boil again, periodically skimming off the resulting foam. Boil the juice for about 3-5 minutes.

Wash them thoroughly in warm water and baking soda, then sterilize them in a convenient way for you - in a water bath, in a microwave oven or in an oven. Pour the hot vegetable juice carefully into sterile bottles using a ladle. Pour boiling water over the lids in advance and screw the bottles with juice with them, then turn them upside down.
