Pumpkin is a fairly popular vegetable, from which cereals, soups and various desserts are prepared, and also used as a side dish. Today I want to share an interesting and simple recipe for healthy pumpkin juice with sea buckthorn.

Wash the ripe juicy dessert pumpkin thoroughly, pat dry with a kitchen towel, and then peel it with a vegetable peeler and remove the core with the seeds with a tablespoon. Cut the peeled pumpkin into medium-sized cubes. Sort the sea buckthorn well, put it in a sieve or colander, and then rinse thoroughly with cool water.

Put the prepared pumpkin and sea buckthorn into a deep metal container with a thick bottom, pour the required amount of cold drinking water. Put on moderate heat and bring to a boil. Then reduce heat, cover and simmer for about 15-20 minutes.

Carefully put the cooked mass in a separate container, cool slightly, and then grind with an immersion blender until smooth. Wipe the crushed mass through a fine sieve covered with several layers of gauze to get rid of the sea buckthorn seeds.

Put the wiped mass in a metal container in which the ingredients were cooked. Add granulated sugar and lemon juice to taste, mix well. Adjust the amount of granulated sugar yourself. Then put on moderate heat and bring to a boil, periodically skimming off the resulting foam.

Boil the juice for a few minutes. Prepare the jars. Wash them thoroughly in warm water, using baking soda as an antiseptic, and then sterilize the jars in a way that is convenient for you. Carefully remove the hot container with pumpkin-sea buckthorn juice from the heat.

Pour the hot juice gently into sterile jars using a ladle. Boil the lids in a saucepan beforehand. Tighten the juice cans with sterile lids, then turn them upside down and wrap with a tea towel. Leave in this form until it cools completely, then move the jars to storage in a dark place. Taste any remaining juice immediately.
