Cooking process
Cooking salted watermelons should start with processing the berries. For convenience, place it directly in the sink and turn on warm water. You can use baking soda or regular soap to rinse the watermelon. It is advisable to repeat this step several times in order to accurately remove all dirt from the surface of the watermelon. Transfer the clean watermelon to paper towels to absorb excess moisture.
Now we need to rinse the jars. To do this, we need baking soda or regular soap. Rinse the jars well. Turn them over and place them on a tea towel to be placed on the table. Place the jar lids in a small bowl. Fill them with cold water. Place the dishes in the microwave and let sit for 5 minutes. Then drain the water and place the lids over the jars.
Spread the watermelon wedges evenly over the containers. Add to them dill, which must be chopped in advance, and currant leaves. Pour cold water into a small saucepan. Put the dishes on the fire. When the water starts to boil, add salt to it. Stir the brine well so that all crystals dissolve quickly. Boil the brine for 2-3 minutes. Then remove the pot from the stove. Let the brine cool slightly. Then strain it using a strainer or plain cheesecloth. Pour brine over the watermelon wedges. Leave them to ferment and sour for about 3 days.
Pour hot brine over the watermelon wedges again. Screw on the caps carefully. Make sure that cracks and other damage do not appear on the surface of the cans. If this happens, you will have to replace the container. Turn the jars over and place them on a towel. In this position, the cans will be subjected to additional heat treatment. Leave them to cool. You can also wrap the jars in a towel or blanket if you wish. When the jars are completely cool, transfer them to a cool place in which the blanks will wait for their time.
