It is necessary to start cooking by processing the watermelon. To do this, you need to rinse it well. For this purpose, use a brush and baking soda. Rub the watermelon on all sides, then rinse off the baking soda. It is advisable to repeat this action several times. You can also wash the watermelon with regular soap. It is recommended to spread paper towels on the table. Transfer the watermelon to them. The towels will absorb all the excess moisture that is on the surface of the watermelon.

The next step is to process the cans. You can choose any method of sterilization convenient for you. For a start, rinse each jar well. Use baking soda or laundry soap to do this. Then fill the jars with water about 2 to 3 centimeters. Place one jar in the microwave. Leave it there for 5 minutes. After that, pour out the water and rearrange the cans on a kitchen towel, which should be spread out on the table in advance. Put all the lids in a plate, fill them with cold water and put them in the microwave also for 5 minutes.

Place the cookware on high heat. Wait for the water to boil and pour boiling water over the watermelons. Cover the jars with a lid. Leave the watermelons to infuse for 10 minutes.

When the time is up, pour the water into a saucepan. To do this more neatly, use a lid with holes. Place the pot on the stove. When the water starts to boil, add the first portion of granulated sugar to it. Stir the brine constantly to dissolve the crystals faster. After the sugar, add salt to the water. Stir well again. The last ingredient will be citric acid. Thanks to it, you can be sure that the seaming will reach the winter. When the brine is ready, turn off the heat and remove the pot from the stove.
