In the conditions of modern apartments, you can successfully pickle tomatoes, as they did in old Slavic times. To prepare and store delicious pickles, you can do without traditional oak barrels. The process of salting and fermentation is carried out in jars, in which you can also store the product if there is a cellar or basement. If there are no such cool storage places, you will have to roll up the ready-made pickled tomatoes after a series of preliminary manipulations. All the details are in the recipe.

Tomatoes for pickling are better to choose fleshy, dense, early ripeness. The fact is that soft, ripe tomatoes are very tender, and during processing they become very susceptible to deformation. Therefore, it is worth using the already reddened, but still slightly unripe fruits. Wash the selected tomatoes thoroughly and let the water drain.

We also wash well currant leaves, horseradish and dill greens. We must remove yellowed and dried areas of greenery. Peel and wash the garlic.

Banks are pre-washed with a soda solution under running water, and then sterilized in any way. At the bottom of the prepared jars, place half of the washed greens and chives. Then put the tomatoes tightly, but without pressure. Cover them with the remaining herbs and spread the other half of the garlic. Heat the water for the brine to a boil and remove it from the stove. Dissolve salt and granulated sugar in hot water. Filter the resulting solution and let it cool completely. Pour tomatoes in jars with cold brine and close them with clean, dry plastic lids. Leave jars of tomatoes at room temperature for three to five days in order to activate the fermentation process. The speed and intensity of the process depends on the temperature. If the apartment is hot, then fermentation will take no more than four days. If the temperature is not higher than twenty degrees, then tomatoes will take five to six days for full fermentation. After that, cans with tomatoes can be removed to the cellar or basement for storage.

If there are no such places, and storage is provided in the apartment, then ready-made salted tomatoes can be rolled up. To do this, pour the brine from the cans into a separate pan. Remove the remaining tomatoes and greens from the jars and rinse under running water. Banks are washed again and sterilized. Boil the lids for rolling in water for a couple of minutes. Put the washed tomatoes with herbs in prepared jars. Bring the drained brine to a boil and pour tomatoes in jars with it. Let the hot brine heat the tomatoes for five minutes and pour it back into the pan. Bring the liquid to a boil again and pour it back into the jars. We immediately roll up the jars with sterile lids.Turn the seams upside down and wrap them in a blanket for slow passive sterilization. When the jars are completely cool, they can be stored in an apartment.
