When you come across overripe or unsweetened fruits when buying a watermelon, in no case throw away the berries, but prepare a simple and very tasty snack that goes well with potatoes and meat.

Without cutting off the green rind, cut the watermelon into small pieces. If you have an overripe fruit, it is better to remove the middle.

Transfer the cut pieces to a container of suitable size.

Prepare the brine: cooled boiled water, salt and sugar. Mix thoroughly until the solution becomes clear. Prepare the brine one liter at a time until we fill in all the watermelons.

Fill the sliced ​​watermelon slices with the resulting marinade.

On top of the container we put a plate of a suitable diameter, immerse it in brine and put a filled three-liter jar on top, which will serve as oppression for us. We remove the entire structure in a warm place for one day, then we take it out into a cold room. The salting time varies from the size of the slices, the smaller the pieces, the faster the salting will occur.

Already salted watermelons, the bright green rind turns into a transparent, almost glassy crust. In the photo on the left, there are still not salted pieces, and on the right, they are completely ready for use. The difference is obvious.
