Solyanka without potatoes

A rich and very hearty soup - hodgepodge, good in autumn and winter. In the process of cooking, be sure to try the soup with salt, as it contains various pickles and smoked meats. Before serving it, let the soup steep for a couple of minutes under the lid.

Pour the meat and smoked ribs with water and place on the stove, bring to a boil. If the foam forms, remove it with a slotted spoon, put the peeled onion to the meat and continue to cook for another 2 hours over medium heat so that the broth boils slightly.

Put the bay leaf and pepper 10-15 minutes before cooking. Remove the meat from the broth and strain it.

Separate the meat from the bones and cut into small pieces. Cut the smoked sausage and ham into strips.

Cut the pickled cucumbers into small strips. Put them in a preheated frying pan, add a little broth to them and simmer for 5-7 minutes, then transfer them to the broth.

Peel the second onion and cut into half rings. In a frying pan, heat the butter and vegetable oil together, fry the onion in it until golden brown. Then add the tomato paste, stir and pour the entire contents of the pan into a saucepan to the broth.

Transfer the chopped meat, olives to a saucepan, taste with salt, salt if necessary, add spices to taste. Cook the soup for another 10-15 minutes over low heat. Then let the hodgepodge brew for 7-10 minutes under the lid.
