Solyanka without sausage

There are many varieties of hodgepodge - an original Russian dish. Here is a recipe for a beef hodgepodge, but without the addition of sausage. Nevertheless, the dish turns out to be tasty and satisfying. Rich broth, cucumber sourness and a slice of lemon will really make the hodgepodge a great occasion to get together for a family dinner.

Defrost the meat in advance if necessary. We collect water in a saucepan, put beef there, add salt, bay leaf and put peeled and washed carrots and onions. We put on fire and cook the meat until cooked for about 1.5 hours. Remove the scale in the process.

While the meat is cooking, prepare the rest of the ingredients. Peel the potatoes and cut them into small pieces.

Remove the skin from canned cucumbers.

Next, cut the peeled cucumbers into small cubes.

We take the finished meat out of the broth along with the onion and carrots. Then we send the chopped potatoes there and cook for 15 minutes until tender.

Peel the remaining raw carrots and onions, then chop (grate the carrots, finely chop the onions) and send them to fry in a pan with vegetable oil. We fry everything for 5-7 minutes.

Next, add chopped cucumbers and tomato juice to the pan.

After that, add chopped olives, bay leaves and chopped herbs to the vegetables. We simmer everything together for about 5 minutes.

We disassemble the cooled meat into pieces and send it to the pan to other components of the hodgepodge. Fry everything for a couple of minutes.

After that, transfer the contents of the pan to the broth with potatoes. After boiling, try the hodgepodge. Add salt if necessary. Cook the hodgepodge for about 10 minutes. At the end of cooking, you can add fresh herbs to the pan.

The dish is ready! Serve a hodgepodge with a slice of lemon and sour cream, if desired.
