Usually, hodgepodge means a hearty, rich soup with the addition of meat and smoked meats. However, you can also prepare a dietary, light, vegetable-based option. Such a hodgepodge also turns out to be rich due to gentle sautéing and piquant due to sauerkraut. And mushrooms and roots add a characteristic aroma to the soup.

Pour the dried mushrooms with water in the specified volume and soak for three to four hours. Then we boil the mushrooms and take them out of the broth. Cut into strips and return back to the broth. Peel, rinse and dry carrots, parsley and celery roots. Cut the roots into thin strips or rub on a coarse grater. Immerse in broth and stir. Continue boiling at medium temperature with a low boil.

We wash fresh white cabbage, dry it and chop it as thinly as possible. Lightly squeeze the sauerkraut with your hands so that it is not too wet. Pour a small amount of vegetable oil into a frying pan and spread both types of cabbage. Simmer for ten minutes at medium temperature, stirring occasionally to prevent burning. We immerse the cabbage in the broth.

Peel the onions and cut them into small cubes. Cut pickled cucumbers into small pieces. Chop the tomatoes. Put the vegetables in a hot skillet and simmer for ten minutes over medium heat. Put it in broth.

Put bay leaf, black peppercorns, hot pepper pod in a saucepan, if desired. We taste the hodgepodge and add salt if necessary. After laying all the vegetables, cook for another 15 minutes and remove from the stove. Let the finished hodgepodge cool slightly and brew. We pour it into portioned plates and decorate with chopped herbs, a thin slice of lemon and a spoonful of sour cream.
