Cauliflower solyanka for the winter

On cold, short days, devoid of solar heat, it is so pleasant to open bright homemade preparations and please yourself and your loved ones with them. Delicious hodgepodge with cauliflower is perfect for everyday and festive table.

Wash the vegetables thoroughly with cold water and dry. Divide the cauliflower heads into inflorescences and blanch them in boiling water for 3-5 minutes, then cover with cold water.

Cut the tomatoes into small slices, transfer them to a saucepan, add salt, sugar and sunflower oil. Cook vegetables, covered, for 10-15 minutes over low heat.

Cut the bell peppers in half, remove the stalks, partitions and seeds, cut the pulp into strips. Add pepper to the tomato paste in a saucepan, simmer for 5-7 minutes.

Add cauliflower to a saucepan, stir and simmer, covered, for 15-20 minutes. Finally, pour in the vinegar, pepper, salt and adjust the flavor as you like. Spread the hodgepodge over dry sterilized jars and screw the lids on tightly. Cool the rolls under a warm blanket, watch for a couple of days so that the lids do not swell and transfer the hodgepodge to a cool cellar.
