When you want something simple, but at the same time sophisticated, I advise you to cook an ordinary hodgepodge from an atypical component for this dish - red fish. By the way, a whole carcass is not needed, so this dish will not ruin the family budget.

Our soup will be rich, so fill in a 1-1.5 l fish set. water, salt and cook until tender for 20-30 minutes. It all depends on the amount of meat on the bone.

While we cook the broth, finely chop the onion and lightly fry it in a frying pan in a little oil.

We leave the onion to cook and use the free time for slicing cucumbers. Cut into strips, after removing the hard skin.

Add tomato paste to the onion and simmer for a couple of minutes.

We return to the broth. Strain it and separate all bones from the fish. We can put the fish in ready-made soup or in a portioned plate when serving. We put the broth on the fire again and wait until it boils again. Add fried onions and cucumbers to it. Cook for 5-10 minutes. Then add capers, olives, pepper, salt, bay leaf and leave to simmer for another 15 minutes.
