Solyanka for the winter without cabbage

Solyanka without cabbage, you are invited to cook from mushrooms in combination with peppers, tomatoes, onions and carrots. You will get not only a delicious salad, but also a ready-made grill for soup, and vegetables for meat stews, and a filling for pies and pancakes. The visiting card of a hodgepodge without cabbage is pre-roasting of mushrooms and vegetables.

Peel the onions and chop them into thin half rings. Heat the oil in a deep skillet or heavy-bottomed saucepan. Transfer the chopped onion to it and fry for 5 minutes.

Wash the mushrooms and cut into small pieces. Transfer them to the fried onions and fry for 10 minutes, preferably allowing the mushroom juice to evaporate as much as possible.

Peel and grate the carrots. Transfer it to the mushrooms, stir and simmer for another 5 minutes.

Peel the seeds from the pepper, chop into strips and transfer to the mushrooms.

Then cut the washed tomatoes into small pieces and add them to the hodgepodge.

Then sprinkle the hodgepodge with salt, sugar, add peppercorns and laurel leaves and simmer over low heat under a closed lid for 1 hour. By the end of stewing, pour vinegar into the hodgepodge. Transfer the finished hodgepodge to a clean jar and sterilize according to the general rules, because all preparations with mushrooms must be sterilized. Store the cabbage-free hodgepodge in a cool, dark place.
