Solyanka is an excellent appetizer from available products, which is served on the table, both as an independent dish, and with any side dishes and meat dishes. I propose a simple recipe for a hodgepodge for the winter without sterilization. The appetizer turns out to be delicious and is suitable even for a festive table.

First of all, sterilize the jars in which you will roll up the hodgepodge.

Rinse white cabbage well, dry and chop finely.

Wash the carrots, peel and grate with a coarse grater. Transfer to a deep bowl.

Peel the onions, cut into half rings and transfer to a bowl.

Wash the tomatoes well. Boil a pot of water. Remove from heat, place tomatoes in a saucepan. Gently transfer the tomatoes to a cutting board with a slotted spoon and peel them off.

Finely chop the peeled tomatoes and transfer to a plate.

Put all prepared vegetables in a deep saucepan with a thick bottom, add salt and granulated sugar. Stir, pour in vegetable oil. Put the saucepan on fire, bring to a boil. Simmer the hodgepodge for two hours, stirring occasionally. Add bay leaves and peppercorns. Pour in vinegar and mix everything well. Remove from heat.

Gently spread the hot hodgepodge in sterilized jars. Screw on with clean dry caps. Turn upside down. Cover with a blanket and let cool completely overnight.
