Cabbage solyanka for the winter is a preparation that can be used as an independent snack or added as a dressing to first courses. If you have no desire or time to stand in the kitchen and cook soup, the hodgepodge will be your lifesaver.

Chop cabbage of late varieties into thin strips using a sharp knife.

Peel the onions, cut into small cubes. Wash the carrots thoroughly and peel them with a sharp knife, but it is more convenient to use a vegetable peeler - it will be faster this way. Grate the peeled carrots on a coarse grater. Heat the pan, pour in the required amount of vegetable oil, add chopped onions and carrots, fry, stirring occasionally, until soft.

Add cabbage, mix well, simmer for about 20-25 minutes, pour in a glass of water if necessary. Add tomato paste, stir and simmer for another 15-20 minutes.

Season with salt, add allspice and black peppercorns, bay leaves, cloves, coriander seeds and granulated sugar. Mix thoroughly. Add vinegar, stir well again and remove from heat.

Pre-wash and sterilize clean cans, pour boiling water over the lids. Spread the hot hodgepodge in sterile jars, cover with lids and roll up using a special seaming machine. Turn the rolled-up cans over and cover with a blanket. Cool completely and store in a cool, dark place.
