Solyanka for the winter with beans

Solyanka is not only a delicious soup, but also a fragrant preservation with cabbage for the winter. You can diversify the classic hodgepodge by adding mushrooms, eggplants, bell peppers or beans to its composition, or maybe you will come up with your own unique recipe.

Wash all vegetables thoroughly under running water. Chop the cabbage into thin strips.

Peel and grate the carrots on a medium grater.

Pre-fill the beans with water and leave them overnight, then boil until half cooked.

Remove the husks from the onions and cut them into thin half rings.

Cut the eggplants into cubes.

Pour sunflower oil into a saucepan, put all the chopped vegetables, put the pan on medium heat and simmer its contents for several minutes, stirring constantly.

Then add the tomato sauce and beans, bring the hodgepodge to a boil, salt, season to taste and reduce heat. Continue simmering for 40-45 minutes. At the end of cooking, add vinegar, stir and remove from heat. Wash and sterilize seaming jars. Spread the hot hodgepodge over the jars, roll up the lids on them with a seaming machine. Wrap the jars in a warm blanket and let them cool completely, then transfer the hodgepodge to a cool, dark place for storage. This roll can be served as a salad or used as a base for a soup.
