Solyanka with chanterelles is an unusual preservation option for the winter. Despite the ease of preparation, the hodgepodge has a delicious taste and aroma. The main secret of a delicious hodgepodge with chanterelles is to maintain the correct proportions of all ingredients. Solyanka is not only a great addition to hot dishes, but also an excellent independent dish.

Rinse the chanterelles thoroughly, place in a pot of water and boil for 30 minutes. After boiling, the mushrooms must be cooled and chopped coarsely. If the mushrooms are small, then you can leave them whole.

The white cabbage should be chopped and transferred to a large container.

Peel the carrots, rinse under running water and then grate on a coarse grater.

Put the prepared vegetables - cabbage, carrots and onions in a suitable saucepan, add vegetable oil, tomato sauce, bay leaves, salt, granulated sugar and spices to your taste. Mix everything and simmer over low heat for about 1.5 hours.

Then add the chanterelles to the vegetables and continue to simmer for another 30 minutes. 10 minutes before cooking, add vinegar to the hodgepodge.
