Abkhazian hodgepodge is a universal dish. It can be either a rich soup or meat with thick gravy. It all depends on your desire. This aromatic spicy dish is perfect for a hearty family lunch or dinner.

Heat the vegetable oil in a deep dish for the stove. Fry chopped onions there.

Chop the beef finely and add to the onion. Salt and pepper to taste, stir constantly. Fry for 3-5 minutes. Then pour the meat and onions with water and simmer for about an hour. Add more water, salt and spices as needed.

Add dry adjika, chopped pickled cucumber, garlic, black peppercorns and bay leaves to the meat. Mix thoroughly. Then we add tomato paste to the hodgepodge, mix thoroughly and continue to simmer until tender. You can add more water to the dish to make it look like a soup. Or you can leave it as it is and serve with a side dish.
