Royal fish solyanka

The royal fish hodgepodge differs from the usual one in that such a rare and tasty, and therefore very expensive, fish, like sturgeon or sterlet, is added there. If it is not possible to buy a sturgeon, its place in this soup may well be taken by any of the common representatives of salmon breeds: pink salmon, chum salmon, salmon, trout, etc. For the fish broth, which is needed for the base of the hodgepodge, any other, most ordinary, small fish is also suitable. The fish hodgepodge will be the tastier the more different fish you add there. In addition to fresh, any lightly salted fish is also suitable.

For a rich fish broth, which will become the basis of the royal hodgepodge, cook the head and tail of the salmon, pouring them with cold water. Do not forget to remove the gills from the head. Let the fish boil, remove the foam and cook over low heat for 30-40 minutes, then remove the head and tail from the broth. During cooking, any roots and aromatic herbs can be added to the broth to kill the specific fishy smell.

While cooking the broth, do another job: chop the onion into cubes or quarters of rings, and chop the carrots into strips.

Cut the cucumbers into halves of circles, chop the tomatoes into small cubes, cut the fish pulp into large portions, removing the bones. Mushrooms can be cut into smaller pieces or left intact.

Put the carrots in the broth.

Fry the onion a little.

Add the tomatoes to the onion and sauté all together until soft.

Add noble fish pulp, roast, and potted peppers and bay leaves to the saucepan. Cook the fish hodgepodge over low heat for 15 minutes. Then add the cucumbers, pickle pickle, olives, mushrooms and capers and cook together for another 5 minutes.
