Solyanka with eggplant for the winter will appeal to those who like weak vinegar blanks. The recipe is simple and quick. Of the spices, only garlic and dill are added to such a hodgepodge. You can stew in a slow cooker or in a special stewing dish.

First, prepare all the vegetables for the hodgepodge: peel the carrots and peppers, rinse them. Wash and sterilize the seaming jars. Chop the cabbage into thin strips.

Chop the eggplants into medium cubes. There is no need to peel the eggplant and remove the bitterness.

Chop the carrots into thin circles. Cut the peeled sweet pepper into thin strips.

Pour vegetable oil into the multicooker bowl. We put all the chopped vegetables into it. Sprinkle the vegetables with salt and sugar and mix a little.
