To prepare a delicious mushroom hodgepodge, you can use any forest mushrooms: porcini, boletus, boletus, boletus or honey mushrooms. We use, for example, chanterelles and prepare them with vegetables to enjoy an amazing hodgepodge in winter.

Sort out the mushrooms, put in salted water and leave for 30 minutes. Drain, rinse the mushrooms and boil for 20 minutes, removing the foam with a slotted spoon. Let the water drain from them by transferring to a colander. Heat oil in a skillet and transfer mushrooms to it. Fry, stirring, for 5 minutes and cover.

Finely chop the peeled and washed onion and place with the mushrooms.

Put the tomatoes in a bowl of boiling water for a couple of minutes, then remove the skin from them.

Cut them into small wedges and add to the mushroom frying.

Peel the carrots, chop on a grater and transfer to the rest of the ingredients.

Add the spices, stir and cook over low heat for 30 minutes, covering the skillet with a lid.

Shred cabbage into small pieces. Shake it with your hands and transfer it to a separate saucepan, on the bottom of which the oil is poured.

Simmer the cabbage over low heat for 5 minutes until it softens slightly, and transfer to other vegetables in a skillet.

Keep the vegetables on the fire, stirring for 60 minutes, until the cabbage is tender. 10 minutes before the end of cooking, pour in the vinegar, stir and simmer for the remaining time.

Place the hodgepodge in sterilized jars and tighten the lids. Turn the container over onto the lids and cover with a blanket until it cools completely for a day.
