Solyanka with mushrooms for the winter

Winter hodgepodge with mushrooms will perfectly complement any potato dish. The recipe is simple, but you have to work a little to make the preparation for the winter. As the saying goes, get your sleigh ready in summer. The fragrant dish will suit your homemade tastes.

Prepare the necessary ingredients for the mushroom hodgepodge. Wash the carrots well and peel them with a vegetable peeler. Peel the onion. Wash the jars thoroughly. Pour boiling water over the lids.

Heat a deep frying pan or cauldron well, pour in vegetable oil. Finely chop the onion and fry until soft and transparent. Meanwhile, grate the peeled carrots on a coarse grater.

Place the carrots over the sautéed onions, cover and cook for about 20 minutes.

Add tomato sauce, granulated sugar and salt to the vegetables. Mix thoroughly.

Peel fresh mushrooms well, rinse, boil in salted water for 15 minutes. Drain through a colander and transfer to the vegetable mixture. Cover and simmer for about 5 minutes over low heat.
