Shop hodgepodge is always tasty, it is prepared from fresh or sauerkraut with mushrooms and pickles, but there are not enough mushrooms in it. This hodgepodge, and even tastier, you can cook yourself. It is advisable to cook it with noble forest mushrooms, but you can also cook it with champignons.

Peel the mushrooms, wash well and cut into medium pieces. Then put them in a saucepan, pour 2 liters of cold water, salt and cook for 30 minutes from the beginning of the boil.

Throw the boiled mushrooms in a colander so that all the liquid is well glass.

Peel the head of cabbage from the top leaves and rinse it with cold water. Chop the cabbage into thin strips, sprinkle with salt and remember a little with your hand to reduce in volume.

Peel the onions and carrots. Chop the onion into thin quarter rings, and chop the carrots into a coarse grater. Heat the vegetable oil well in a cauldron. Transfer the chopped onions and carrots to a cauldron and simmer until tender, stirring occasionally.

Grate pickles on a coarse grater.

Put boiled mushrooms, chopped cabbage and pickles into the cauldron to the fried onions and carrots. Add the right amount of salt, sugar, tomato sauce, black pepper, laurel leaf to the hodgepodge and mix everything. Simmer the hodgepodge for 1 hour over low heat, stirring occasionally and adding water as it boils away. 10 minutes before the end of cooking, add vinegar to the hodgepodge.

Be sure to try the ready-made hodgepodge. Then, while still hot, lay out in sterile jars.

Roll up the jars with boiled lids. Then turn them upside down and cover with any "fur coat". Transfer the cooled hodgepodge with mushrooms as in a store to storage in a cool place.
