Solyanka with pearl barley

Solyanka with potatoes and barley is something in between pickle and cabbage soup, as it contains similar ingredients. In the old days it was called "village" or rural soup, gradually the name was changed to "hodgepodge", which also fully corresponds to this soup, primarily for its salty and slightly spicy taste.

Cut the pork into small pieces. Pour some sunflower oil into a saucepan with a thick bottom and fry the pork in it.

Cut the onion into half rings and put it in a saucepan with the meat, fry together.

Grate the carrots and add them to the meat and onions in a saucepan, continue to fry until the carrots are soft.

For flavor, add a few canned pepper chunks. If such a roll is not at hand, you can replace it with tomato paste or fresh bell pepper.

Soak the pearl barley in cold water for several hours, then rinse it and put it in a saucepan.

Pour 2.5 liters of boiled water into a saucepan, add seasonings, stir. Bring the hodgepodge to a boil and cook covered over low heat for about an hour.
