Responsibly treat the choice of currants. Be sure to inspect the berries and check their smell. If the aroma of the currants is slightly sour, then it has already begun to deteriorate. It is not recommended to buy such a product. Transfer the currants to a small bowl or saucepan. Go through it, removing all damaged berries. To quickly remove all debris from the currant, fill it with water. Leaves, small insects, etc. will float to the surface. Remove debris with a clean piece of cloth. Then change the water and leave the currants in it for about 30 minutes. When the time is up, start washing the berries. It is best to do this several times. Place paper towels on the table. Pour the currants on them. The towels will absorb all the moisture from the surface of the berries.
Now we need to sterilize the jars that will store our sauce. First, wash them thoroughly using baking soda or detergent. Fill a pot with cold water. Put it on fire. Wait for the water to boil. Then scald the jars and lids. Fill the kettle with water. Move it to high heat. When the water starts to boil, place the jar on the spout of the kettle. It should be filled with steam. Hold the jar in this position for a few minutes. Then put it on a towel, which you need to spread out on the table in advance.
Add garlic to the sauce. Sprinkle ground cloves and cinnamon into it. Stir the sauce well. Add black pepper and black allspice. If you plan on leaving the sauce in a warm place, add vinegar to it. Stir everything well. If you want to sweeten the sauce, pour water into a small bowl and add granulated sugar. Melt the mixture in the microwave, and then add to the sauce. Mix everything again. The spices can vary depending on your preferences and tastes.
If you want the sauce to be free of pieces of berries, strain it. This can be done using a sieve or regular gauze, which you will definitely find in your kitchen.Pour the sauce gently into sterilized jars. Twist them up. Make sure that no cracks appear on the glass. Transfer the finished sauce to a cool place.
