Before cooking, we need to process the red currants. First, sort out the berries, removing any spoiled fruits. Check the currants for debris. Remove various leaves and small insects that may have been among the fruits. Transfer the berries to a small saucepan or bowl. Cover them with water and let stand for 30 minutes. When the time is up, rinse the currants several times. Pour the berries into a colander. Wait until most of the liquid has drained from the currants. Spread paper towels on the table. Put the berries on them and leave them to dry.

When the berries are dry, they will need to be chopped. You can do it manually using a crush. If you have a meat grinder or blender in your kitchen, choose them. Rub the chopped berries through a sieve. You can also use a shallow colander. It is necessary to squeeze the juice of currants and cake through cheesecloth. Then mix them together.

Transfer the currant berries to the pan. Put it on a small fire. When the berries begin to gurgle, add the first serving of sugar. Stir the sauce. Add granulated sugar gradually. Make sure it dissolves well. The sauce should not boil. If this happens, you will have to throw out the resulting mixture and start cooking all over again. When you've added the last sugar, pour the vinegar into the pan. Stir the sauce well. Then add black pepper, black allspice, ground cloves and cinnamon. Mix everything well again.
