Cooking process

step 1 out of 6
If you are planning to buy red currants, be sure to pay attention to their appearance and smell. If the berries have a sour aroma, then they have already begun to deteriorate. It is not worth buying such a product. Before cooking, we need to carefully sort out the currants. Remove all spoiled fruits from it, as well as various debris that could be in it. Pour the currants into a deep bowl and cover with water. Leave it on for about 30 minutes. When the time is up, rinse the berries several times. Spread a regular tea towel on the table. Place the berries on it.
step 2 out of 6
Currant berries must be chopped. To do this, you can use a blender or meat grinder. You grind the resulting mass. For this purpose, use a strainer or fine colander. Squeeze out the juice and cake with cheesecloth. Mix them together. After that, transfer the finished berry mixture to a saucepan and put it on low heat. When the berries begin to gurgle a little, add the first portion of sugar to them. Stir the sauce well. The granulated sugar must completely dissolve. When you've added the last sugar, pour the spice and ginger mixture into the saucepan.
step 3 out of 6
Peel the garlic. We only need two cloves for the sauce. Shred them with a knife or press. Add the garlic to the pot. Pour vinegar over the last ingredient. Stir the mixture again. Cook the sauce for 15-20 minutes. When the time is up, turn off the heat and remove the pot from the stove.
step 4 out of 6
We start processing cans. The first step is to wash them well with baking soda. Fill the pot with cold water and place it on the stove. When the water boils, scald the jars and lids with boiling water. We fill the kettle with water. We put it on fire. When the water starts to boil, place the jar on the spout of the kettle so that it fills with steam. Keep it in this position for 5 minutes. If you don't have a kettle in your kitchen, you can replace it with a regular saucepan. When the time is up, transfer the jar to a towel. Leave it there until it dries completely.
step 5 out of 6
Strain the sauce before filling the jars. To do this, use a sieve or regular cheesecloth. This will remove all the berries and seeds from the sauce. Spread it evenly over the jars. Screw on the caps carefully. Make sure that no cracks form on the surface of the cans. If this happens, replace the container. Turn the jars over and place them on a towel. In this position, the lid will undergo additional heat treatment.Wait for the jars to cool completely. Then transfer them to a cool place where the sauce will wait for winter.
step 6 out of 6
The combination of currants and ginger creates a very pleasant and unusual taste. It goes well with any type of meat. The main advantage of this sauce is that it can be stored in your refrigerator for a long time. Such an addition to the dish will definitely be able to pleasantly surprise your guests.
