Grilled salmon steak

To deliciously cook a salmon steak on the grill, you practically don't need anything other than, in fact, salmon. Add only salt, black pepper and a little paprika. The natural taste of this fish is so pleasant, and the flesh is so tender and greasy, that the most important task during cooking is simply to preserve these natural characteristics. It is also important not to overexpose the fish on the grill. As soon as the flesh has changed color and began to be covered with the lightest crust, it's done.

We clean the salmon, cut the abdomen and remove the insides. Cut off the head, tail and fins. Dry the resulting carcass with paper towels and cut it with a sharp knife into steaks two to three centimeters thick.

Sprinkle the steaks with salt and ground black pepper. Add a little ground sweet paprika and rub the spices over all the fish pieces with your hands. We place the steaks in a deep dish, tighten with cling film and leave to marinate for forty to fifty minutes.

We prepare a grill with embers. Grease the grate with a small amount of vegetable oil so that the delicate pulp of the salmon does not stick and then easily moves away from the twigs. Place the prepared steaks on the wire rack. We send the fish to the grill and cook it for about seven to ten minutes on each side.

We follow the fish: we wait for the color change and light browning. This will mean that the fish is ready.

Transfer the finished trout steaks from the wire rack to the dish. Serve hot. Better accompaniment for the manifestation of the taste of fish - lemon and fresh herbs.
