It is important to properly cut the fish into steaks: their thickness should be at least three centimeters. If the pieces of fish are too thin, then there is a risk of overdrying tender trout.

Wash the fish thoroughly, cleanse the scales, remove the insides. Cut the carcass into rather large steaks - at least two and a half to three centimeters thick. Dry the cut fish with a paper towel.
