Pike perch meat is very tasty, and when baked in foil on the grill, all its natural juiciness and delicate sweetness are preserved. The fish pulp is very tender. For flavor, together with fish, wrap onion rings and a few slices of tomato in foil. Such a fish is prepared literally in its own juice, flavored with vegetables and spices.

Wash the pike perch, clean it from the scales, remove the insides, leave the head and fins. We rinse the inner cavity again and then dry the carcass well with a paper towel inside and out.

Peel the onions, wash, dry and cut into thin rings. Wash the tomatoes and cut them into mugs. Cut the prepared fish carcass shallowly in several places, sprinkle with salt, white pepper, pour with olive oil and lemon juice. Using our hands, distribute the resulting marinade over the inner and outer surfaces of the pike perch. Leave to marinate for thirty to forty minutes.

Cut off a piece of foil of such a size that you can reliably wrap the pike perch in it. We put a part of the onion on the foil, put the pickled fish carcass on the onion.

Place part of the tomatoes inside the pike perch. Put the remaining onions and tomatoes on the fish. We wrap the fish in foil. If necessary, you can wrap it in another layer. It is important that all juices remain inside. We prepare a grill with embers. We place the fish in foil on the wire rack and send it to the grill. We cook for about thirty minutes, remembering to turn the pike perch for an even heat treatment.

Carefully remove the finished fish from the wire rack, place it on the work surface and open the foil. Serve hot. Additionally, when serving, you can sprinkle with olive oil and lemon juice for added juiciness.
