Classic pork kharcho soup with rice

Kharcho is a national Georgian first dish based on beef broth with rice, tkemali sauce and walnuts. In Slavic cuisine, this soup is often made from pork, and tkemali is replaced with tomatoes or tomato paste.

Wash the pork, cut and cook. Remove the foam from the surface of the boiling broth, cook the meat over low heat until tender.

Peel the onion, chop finely and fry in sunflower oil.

When the meat is ready, strain the broth. Transfer the fried onions and rice to the broth and cook again.

Remove the skin from the tomatoes and chop finely. Add tomatoes and tomato paste to the broth. Continue simmering for 15 minutes over low heat.

Chop the garlic, chop the herbs finely with a knife. When the rice is cooked, add the garlic, bay leaf, herbs, suneli hops and salt to taste. Leave the kharcho soup covered for 10 minutes, then serve.
