Homemade pork kharcho soup

Kharcho is usually served in Georgian restaurants. Such a bright and rich soup can be made at home from pork or other meat that is in the refrigerator. Mandatory ingredients for kharcho are suneli hops, cilantro and garlic.

Wash the pork and cut into small pieces. Dip the meat in cold water and cook until tender.

Rinse the rice. When the meat is done, add rice and salt to your broth to taste. Time yourself.

Peel and chop the onions. Grind the peppercorns in a mortar along with the walnuts.

Pour vegetable oil into a preheated pan, fry the onion on it until golden brown, then add flour, stir and simmer for 2-3 minutes. Then add walnuts, pepper, coriander, bay leaf, fry the contents of the pan for a couple of minutes and transfer to the broth.

After 20 minutes from the start of cooking the rice, add tomato paste, chopped herbs, suneli hops, cinnamon and red pepper to the kharcho soup. Cook for 5-7 minutes. Then remove the soup from the heat, add the dried garlic and cilantro, close the lid and after 15 minutes the soup can be served.
